We migrate out of anything with an API or a usable export: Salesforce, Pipedrive, Zoho, Dynamics, Airtable, spreadsheets. HubSpot is where most of our destination work sits, so that is where we know the import limits well enough to plan around them.

Work runs against your systems with credentials you issue and can revoke. Nothing is uploaded to a third-party service for processing. If you would rather we develop against a sample, anonymise it with the Data Anonymizer first. NDAs and DPAs are no problem.
Often, yes. It depends on whether the source system still exists. If it does, most of it is recoverable. If it was switched off and the export is all that survives, some of it is gone, and we will say so on the call rather than three weeks into an invoice.
